This is a light and fresh salad that makes for a simple and healthful brown-bag lunch at work or school. Snow peas can be substituted for the beans. Garnish with a cilantro sprig.
Ingredients
Dressing:
- ¼ cup rice wine vinegar
- ¼ cup low-sodium soy sauce
- 2 Tbsp. dark sesame oil
- 2 Tbsp. grated ginger
- ½ tsp. sugar
- ¼ tsp. pepper
- 3 cloves garlic, minced
- 1 jalapeño, finely chopped
Salad:
- 3 oz. linguine
- 1 lb. green beans, trimmed
- 2 cups sliced celery
- 1 cup thinly sliced bell pepper
- ½ cup sliced green onions
- ⅓ cup chopped fresh cilantro
Directions
- Whisk together dressing ingredients and set aside.
- Cook pasta according to package directions, adding beans during last 3 minutes of cooking. Drain and rinse immediately under cold water until cooled.
- Gently stir in remaining vegetables. Toss with dressing to serve.
