Ingredients
Dressing:
- 2 cups spinach
- ½ Tbsp. rosemary
- 2 Tbsp. water
- 2 tsp. tahini
- 1½ Tbsp. olive oil
- 1 Tbsp. lemon juice
- 1 clove garlic
- ½ tsp. salt
Potatoes:
- 4 cups scrubbed and halved fingerling potatoes
Directions
- Preheat oven to 400ºF.
- In a food processor, purée dressing ingredients until smooth.
- Toss potatoes with dressing and spread in single layer on a baking sheet. Bake until tender and lightly browned (30-35 minutes).
