Tomatillos, which are related to tomatoes but have their own special flavor and qualities, are astringent when raw, but gorgeously mellow when roasted. This salsa is the perfect fundamental recipe for learning how to cook with them.
Ingredients
- 7 tomatillos, husked
- 1 jalapeño pepper, seeded and chopped
- 1 clove garlic, chopped
- 1 tomato, chopped
- 3 Tbsp. chopped cilantro
- ¼ cup finely chopped onion
- 1 tsp. lime juice
- ¼ tsp. salt
Directions
- Place tomatillos in a single layer on a baking sheets. Broil on high until slightly charred, turning once (7-8 minutes). Cool on baking sheet.
- Place all ingredients in a blender and process to a chunky pureé.
- Chill to allow flavors to blend (45 minutes).
