Comfort Food Meatloaf

This healthy makeover of a well-loved comfort food is a recipe worth having in your rotation. Using spices, herbs, and zest to punch up the flavor, this recipe will be requested by your family time and again.

Ingredients

  • ¼ cup onion, chopped
  • ½ cup chopped bell pepper
  • 1 lb. 95% lean ground beef
  • ½ cup tomato paste
  • 1 cup chopped tomatoes
  • ½ tsp. mustard
  • ¼ tsp. pepper
  • ½ tsp. chopped chili pepper
  • 2 cloves garlic, chopped
  • 2 scallions, chopped
  • ½ tsp. ginger
  • ⅛ tsp. nutmeg
  • 1 tsp. orange zest
  • ½ tsp. thyme
  • ¼ cup oatmeal

Directions

  1. Preheat oven to 350ºF.
  2. Coat a skillet with cooking spray and sauté onion and pepper until soft (3-5 minutes).
  3. Mix all ingredients together thoroughly.
  4. Place in 1 lb. loaf pan and baked, covered, until it reaches a minimum internal temperature of 165ºF (50 minutes).
  5. Uncover pan and continue baking until crisp on top (12 minutes).
