Ingredients
- ¼ cup light mayonnaise
- 2 tsp. curry powder
- 2 cups cooked, cubed turkey
- 1 avocado, peeled and cubed
- ¼ cup dried cranberries
- 2 Tbsp. chopped fresh cilantro
- Pepper, to taste
- 8 slices light, whole-grain bread
- 2 cups salad greens mix
Directions
- Mix mayonnaise and curry powder in a large bowl until well blended. Stir in turkey, avocado, cranberries, and cilantro.
- Divide turkey salad evenly among 4 slices of bread.
- Sprinkle with pepper and top each with greens and remaining bread.
