Turn that garden bounty into a refreshing and lovely meal by using cucumbers as a serving base for a delightful bruschetta-like topping.

Tip: This recipe will look fresher made with white balsamic vinegar, but if you don’t have any on hand, regular balsamic will taste just as good.

Ingredients

  • 1 cup finely chopped tomatoes
  • 1 cup finely chopped zucchini
  • ½ cup corn
  • ¼ cup shredded carrot
  • 3 Tbsp. sliced fresh basil
  • ¼ cup grated parmesan cheese
  • 1 clove garlic, minced
  • ¼ cup balsamic vinegar
  • 2 large cucumbers, halved lengthwise and seeded
  • 4 Kalamata olives, sliced

Directions

  1. Mix all ingredients except for the cucumbers and olives in a bowl.
  2. Fill the cucumbers with the bruschetta and top with sliced olives to serve.
